Dark HelmetMember Submission – Jason Stroble

For those that don’t know me, my name is Jason Stroble and I’ve been a SAAZ member for about four years now and a homebrewer since 2008.  Recently, my wife Sabrina Stroble, took one of my homebrews, created a homebrew African Stew, and I paired it with even more of my homebrew!

I call my home brewery The Dino Brewing Company.  In my “experimental” line of beers (the Paleo Discovery Line) I developed and brewed a 10%, 80 IBU Imperial Stout and named it “Dark Helmet.”  From my “seasonal” line of beers, beers I only brew during certain seasons, I developed and brewed a 7.6%, 123 IBU all Centennial Hops Imperial American IPA and named it “The Cenator.”  Both of these beers were featured in the dinner listed below … but since you don’t have either of those brews at your disposal I recommend substituting my homebrew with your homebrewed Imperial Stout and Centennial focused IPA or substituting in the commercial brews Founders Imperial Stout and Founders Centennial IPA.

Dark Helmet African Stew – The Recipe

Ingredients: (NOTE:  Unless otherwise specified please use all fresh ingredients.)

2 Red Chili Peppers                                          1 Large Red Onion
4 Cloves of Garlic                                              3 Tablespoons Olive Oil
1/2 Cup of Sunbutter                                       Sea Salt as Described Below
1/2 Tablespoon Nutmeg                                14.5 ounce can of crushed tomatoes
1 Cup of Arugula                                                1 Cup of Spinach
1.5 Cups of Yellow Corn (can be frozen)  1 Can of Black Beans
2 Large Sweet Potatoes                                   2 Medium Skinless/Boneless Chicken Breast
6 oz Dino Brewing Company’s Dark Helmet Imperial Stout (or your substitution)

Cooking Directions:

1) Boil the chicken until cooked with a pinch of salt, black pepper, and nutmeg.
2) Heat the 3 Tablespoons Olive Oil in a medium/large pot on medium heat.
3) Add the chopped Large Red Onion and cook until soft but not brown.
4) Use a food processor to emulsify the 4 Cloves of Garlic and 2 Red Chili Peppers. Add them to the pot and cook for 5 minutes.
5) Add a pinch of salt and mix in.
6) Blend the not strained can of tomatoes in a blender for 30 seconds. Add to the pot.
7) Stir in 1/2 Cup of Sunbutter until smooth.
8) Shred and add the cooked 2 Medium Skinless/Boneless Chicken.
9) Add 6 oz of Dino Brewing Company’s Dark Helmet Imperial Stout (or your substitution), 10 oz Water, a pinch of salt, and 2 cubed large Sweet Potatoes. Mix well.
10) Cover the pan and simmer for about 15 minutes (until the sweet potatoes are tender but not falling apart).
11) Add 1 Can of strained Black Beans, 1.5 Cups of Yellow Corn, 1 Cup of Spinach, 1 Cup of Arugula, 1/2 Tablespoon Nutmeg, and a pinch of salt. Mix well.
12) Cook until the beans and corn are heated through and the spinach and arugula is wilted.

Serving

Plate in a bowl and serve alongside the Dino Brewing Company’s Cenator Imperial American IPA (or your substitution) in a standard pint glass. Oh … and most importantly … ENJOY!  For more recipes and general homebrewing and beer shenanigans check out my facebook page at www.facebook.com/TheDinoBrewingCompany .
