Blow off from the Prez

Welcome to the May edition of the “Blow off from the Prez” and welcome to American Craft Beer Week 2012! Dubbed the ‘Mother of All Beer Weeks,’ American Craft Beer Week is the annual celebration of small and independent craft brewers, their craft beer and the American craft beer culture. How will you celebrate ACBW 2012? Go have a pint at your local pub from a craft brewery you’ve never heard of? Why not try brewing a style of beer you have never brewed before? Or, how about teaching a friend about great American craft beers?

Wherever your plans take you, be sure to end your week at the monthly meeting on the patio at World of Beer. They have asked SAAZ to help them bring ACBW 2012 to a close with a brewing demo and I’ll be going over the practice and benefits of 1 gallon test batches.

I’ll bet your week will be overflowing with great craft beer however you choose to celebrate. I know mine will.

Cheers,

Kip

Beer Education

About Mead Making

The first thing you are going to discover about Mead Making is that there are about 1,000 different ways to do it. And this may leave you confused. Which way should you follow? You may think this particularly critical when you are first starting out but in actuality this is very encouraging. The simple fact, it seems to me, is that you can successfully make a batch of great tasting mead using any recipe or process you want! Mead is very forgiving and very easy to make. It pretty much makes itself!

An overview of the Process

1. You mix a batch of water and Honey (typically it is 4 gallons of water and 12-15 pounds of honey. This 12-15 pounds of honey is about 4-5 quarts. Typically you heat this mixture but it isn’t mandatory.

2. You add yeast and yeast nutrition to the honey water mix. The yeast will gobble up the honey and transform it into Mead. You should add some kind of nutrient to the mixture so the yeast can grow. This nutrient can be store bought or it can be a variety of things like lemon peels and tea leaves.

3. You let it sit for a period of time. Typically about two weeks is the amount of time it takes for the initial fermentation to occur. At this stage your mixture should be bubbling nicely. You then move it to a large clear bottle so you can keep an eye on it. Keep it in this new blass bottle for another two weeks to two months until it isn’t doing anything anymore. (no more bubbling and no more activity)

4. Put it in individual bottles and store it! Depending on how much honey you put in the mixture it will be ready to drink anywhere from 3 months to a year. (Less honey means faster ready time)

Blow off from the Prez

Welcome to the April edition of the “Blow off from the Prez”. I have both good and bad news to report this month, but even the bad has a positive aspect.

What is the bad news? Our very own Drew Thaller is leaving Florida to return home to California. Drew has been the product manager for the Viera World of Beer since it opened and has been a major factor in its success. Now Drew will be working as a Belgian beer rep, traveling the state of California from bar to bar, forced to share a pint now and then with his customers. I wish him well. Tom Liska (also a SAAZ member) will be taking over as product manager. Glad to see we are keeping it in the family.

Now for the good news. MORE BEER! Kevin and the folks at The Broken Barrel Tavern will be celebrating their 3rd anniversary Tuesday, April 17th and we have all been invited. Kevin ends the e-mail by saying ” From the bottom of my heart and on behalf of everyone at The Broken Barrel Tavern, thank you so very much and I hope you have the opportunity to join us Tuesday and have some Great Beers and Win some Free Stuff!”. Good beer, great food, and free stuff. What more could you ask for? Well, how about another craft beer bar? Yes, I have it under good authority that Crispy’s Beer and Wine Bar will be opening their doors very soon (maybe as soon as the 20th). Those of you in the Rockledge area will have yet another choice when it comes to good beer. I’m looking for Chris and Joe to do great things here. Good luck guys.

So, good news or bad, it’s your call. The pint may be half-empty, but there is always another beer waiting to be poured.

Cheers,

Kip

Beer Education

Making a Porter Recipe

The Porter Beer Style

Porter is a English beer style that has become very popular in the United States. This week we will look at the origins of Porter, how to brew Porter at home and provide a collection of sample recipes. When I started brewing back in the 1980′s, the microbrewery revolution was still in its infancy, and it was difficult to find anything beyond the classic American lager in the stores. Yet dark beers were a passion of mine, and Porter was a perennial favorites.

History

Porter is first mentioned in writings in the early 1700′s, and the name Porter is derived from its popularity with London’s river and street porters. There are many stories surrounding the origins of Porter, such as one about it being a blend of three other beers, but more likely Porter was derived from strong brown ales of the period. Original porters were substantially stronger than modern versions. Wikipedia mentions that hydrometer measurements on 18th century Porters indicate original gravities near 1.071, or 6.6% ABV – about twice the alcohol of a modern beer.
Taxes during the Napoleonic wars drove the alcohol content down to modern levels. Porter was also the first large scale beer to be entirely aged before delivery, often remaining in vats or casks for 18 months before shipment to pubs. As the 1800′s started, breweries mixed aged porter with new porter to reduce storage times. Stouts started as a stronger, darker version of Porter, with most including the name “Stout Porter”. Eventually the “Porter” tag was dropped giving the modern style of “Stouts”. (Re: Wikipedia)
In another interesting side note, Porter’s popularity was so high that it was stored in huge vats in the late 1700′s, and there was an arms race of sorts between major breweries to see who could build the largest vas. According to Ray Daniels book (below), the largest vats approached 20,000 barrels (860,000 gallons) at the end of the 1700s. This compares to the largest in the world today which clocks in at around 1600 barrels, less than 1/10th the size. In October of 1814, a huge vat at the Meux brewery ruptured and reportedly wiped out an adjacent tank and devastated the neighborhood in a 5 block radius. In the ensuing chaos at least 8 people were killed.

Designing a Porter Recipe

Designing Porter recipes can be a lot of fun as the Porter style includes room for experimentation. Porters have an OG of 1.040 and up, color of 20-40 SRM and bitterness of 18-35 IBUs for Brown Porter, or up to 55 IBUs for higher gravity Robust Porter. The color is brown to black, and they have low to medium hop flavor. They are almost always brewed with a full bodied mash schedule (higher mash temperature of 154-156F) to give a full body taste. They have low ester, fruitiness and diacytl, are well balanced and have low to medium carbonation.
Traditional porters start with a Pale malt base, and typically add a mix of Crystal, Brown, Chocolate and Black malts to achieve a dark color and taste. Roasted malts are used only in Robust Porter styles. Pale malt makes up 40-70% of the grain bill (60-80% for malt extract brewers). Dark Crystal/Caramel malts are used for color and body and provide at least 10% of the grain bill. Chocolate and Roasted malts each average around 5% of the grain bill, with roasted malt less common in Brown Porter.

A variety of grains including Munich malt, Roasted malt, wheat and additives are also used. I will occasionally brew “kitchen sink” Porter which consists of whatever malts I have laying around over a pale malt base. Traditional Porter also made heavy use of Amber and Brown malts, though these are less commonly used today. Ray Daniels recommends a mash temperature of 153F, though I often go a bit higher (156F) to provide a full bodied beer.

Traditional English hops are the appropriate choice for Porter, with East Kent Goldings being a favorite of mine. Other good choices include Fuggles, Northern Brewer, Northdown and Williamette. Light dry hopping is appropriate to the style, though hops aroma should not be dominant. English ale yeast is traditionally used for Porter for its fruity flavors, though other high attenuation yeasts are appropriate. Irish ale yeast is also occasionally used by homebrewers. Adjuncts are only rarely added to specialty Porters. A London water profile (high in carbonates) is best.

Drop Off Locations - [Coming Soon]

Rules and Regulations

Judging will be based on the 2008 BJCP Style Guideline revisions.

If you are not yet familiar with the changes in this revision, please read the guidelines for your entry styles, as all required information must be provided. Most judges will be BJCP certified and any novice judges will be paired with experienced BJCP judges. Our goal is to provide the best feedback possible for your entry. Judges are encouraged to enter the competition, but will not be allowed to judge any category in which they have entries. The competition is open only to amateur brewers; commercial or brew-on-premise beers will be disqualified.

Only two entries per style subcategory for categories 1 -19. There is no entry limit on categories 20-26. Each entry shall consist of three, preferably but not limited to, 10-12 oz. bottles; 7 oz. bottles are permissible for strong ale and mead categories. Rocket fuel entries only require two 10-12 oz. bottles. All commercial and homemade labels must be removed. Bottles should be free of identifying marks, no raised letters (Sam Adams bottles are ok). Bottle caps should be plain or have any markings inked or blacked out. Bottle must have labels attached by rubber band, preferably around the bottle neck – no glue or tape.

This competition will NOT accept entries using AHA paper entry forms and bottle labels; you must use the electronic entry system, which automatically updates the competition database. All entries must be properly labeled using the bottle labels produced by the electronic entry system. Entries are $6 each (only $5 for Rocket Fuel); please send a check for entry fees made out to SAAZ with your entries.

Rocket Fuel

Rocket fuel is not for the faint of heart. In fact, it is for the warped, twisted, and truly extreme brewers! This category is specifically designed to determine which homebrewer has the rocket fuel it takes to send the Commander into orbit! Rocket fuel requirements: two 12oz entries as described above; entry must be 10% or more ABV; entry must be fermented and not concentrated, distilled, or fortified in any manner other than in accordance with BJCP guidelines (eisbocks are acceptable, but adding spirits to the entry to increase ABV is not). It’s that easy. Entries may be beer, mead, cider, or any combination. If the entry qualifies as any other BJCP style (e.g. Russian Imperial Stout), it may be entered as both, but would require two separate entries – one as rocket fuel and one as RIS. Rocket fuel tends to be for more esoteric and extreme examples, (think DFH 120 min IPA or Avery Mephistopheles). Also, since rocket fuel has its own category (and trophy) and is not a BJCP style, it is not eligible for Best of Show.

Blow off from the Prez

Welcome to the March edition of the “Blow off from the Prez”.

Spring is just around the corner and we all know what that means – PARTY! That’s right, it’s time for the SAAZ Annual Spring Party at Suntree Rotary Park. This year we will not only be celebrating spring, but the 20th anniversary of SAAZ ! We will be preparing a Low Country Boil with potatoes, corn, sausage, shrimp, and whatever else Dave Webb wants to throw in the pot. We’ll have the grill going with hot dogs for the kids. Feel free to bring something to grill if seafood is not your thing. There will be cake and beer, of course, and maybe even a special keg from an Athenian brewer.

The party starts at noon, but we could really use some help setting up around 10:30 – 11:00am. Please bring a side dish to share and ice for the coolers. We will be accepting entries for the Spring Fling (you didn’t forget, did you?). We will also have a brew in a bag demo going on with the same beer being brewed extract style for comparison later. What more could you ask for? A raffle? There is always room for a raffle.

Looks like a fun afternoon to share with your fellow homebrewers. I hope to see you there.

Cheers,
Kip

Welcome to the February edition of the “Blow off from the Prez”.

The next few weeks are shaping up to be a busy time for home brewers. The SAAZ “Spring Fling with Smoked Wings” entry window opens Friday, Feb 17th. The Space Coast Craft Beer Festival and the BFBC are both on the 25th. Florida’s Brewers Guild “Beerfest 2012” is on March 3rd. Don’t forget the Spring Party March 10th (or should I say Birthday Party?). And that is just scratching the surface.

Blow off from the Prez

Hello, and welcome to SAAZ 2012. Allow me to introduce myself. My name is Kip and I’m a homebrewer. I also have the honor of being this year’s president. And what a year it is going to be. We will be celebrating our 20th year as an AHA registered club. We will be hosting our 18th annual Commander SAAZ Interplanetary Homebrew blastoff this fall and introducing a new competition with the SAAZ Spring Fling with Smoked Wings this April. Add to that several great meetings, a handful of wonderful parties, and even the possibility of a club sponsored trip and you have the recipe for a great brew year.

Of course, none of this will be possible without you. We will be looking to the membership for hands on support as well as ideas and inspiration. Members are encouraged to take part in project committees, present educational topics at meetings, help out at competitions and festivals, and just plain keep us on our toes. The officers may have the responsibility to drive the bus but we rely on you to pick the direction.

Speaking of officers, we start this year with a crack new group of officers. Along with myself we have Matt Backus as 1st VP, Dave Webb as 2nd VP, Anne Gregg as Treasurer, Alex Hansen as Secretary, Sonia Miller as Librarian, and Dan Shirah as Newsletter Editor and Webmaster. We are all very eager to get this year going.

So grab a homebrew and lets make our 20th year one to remember.

Cheers,
Kip

Secretary’s Report

The past year has brought forth some exceptional club events. The December Christmas party was certainly no different and it was a GLORIOUS way to end the year. There was a wide array of food and some exceptional brews to try. Several club members brought experimental ales for sampling. Of course there was even some extreme BBQ grilling during the early hours of the night. Hopefully you caught the festivities of the annual bottle exchange because this year brought forth some interesting options and some hilarious trades. Special thanks goes out to our hosts Jill, Sophia, and Larry Vita. Thanks to everyone that contributed to 2011 and made it such a memorable year for SAAZ.

Education – Growing Your Own Hops (from morebeer.com)

Growing your own hops at home is easy, fun, and very rewarding – especially if you brew your own beer at home. Hop Vines grow from a rhizome, which is essentially a piece of root taken from a larger, mature plant. The rhizome is planted in the ground in the late spring and small, green shoots pop out of the ground a few weeks later. A hop vine can be very vigorous, growing up to 2′ per week till the end of June when growth slows down and the plant enters into flowering stage.

When and How to Order Hop Rhizomes

Hop Rhizomes are available once per year, typically in March/April, after the farms dig up the rhizomes and ship them to suppliers. Pre-sales start in February and allows you to order the hop rhizomes in advance to make sure you can get the varieties you want. When you receive your hop rhizomes in the mail, keep them refrigerated (but not below freezing) and well ventilated until your soil is ready for planting.

Blow off from the Prez

Welcome to the last Blow-off of the year and what will be my last edition as your 2011 President. In looking over the last couple of years, it has really been fun. In the past two years we’ve seen 65 new people join the club (WOW!); we’ve had our largest Commander SAAZ competition EVER with 549 entries; we’ve also established some great relationships with local craft enthusiasts like Broken Barrel, World of Beer, and Vintage 56. We’ve also seen many friends move away, and even pass on. I think that with the plethora of new faces and energy, they club has a lot of momentum to move in the right direction!

As 2012 quickly approaches, I want to reach out the membership and ask everyone to lend a hand, an idea, or an experience. The club is only a Tax ID number and a checking account. It’s the members that volunteer their time to lead a monthly education topic, it’s the members who help sort 1,600 bottles of beer, and it’s the members that truly make the club run. As president for the last two years, and secretary a year before that, I have enlisted the help of a lot of people (some volunteered, and some were volun-told). I know that each and every member brings something unique to the club, and it’s been a great two years to get to know so many new people. I hope everyone will volunteer to help the club in some way and share those traits with the membership.

Next year has a lot of great things already planned. Get to brewing now so you have entries ready for the Best Florida Beer Competition in February; our Spring Party will be the club’s 20th anniversary; and we are holding a SAAZ club-only competition in April to lube the chassis and get prepared for next year’s Commander SAAZ Interplanetary Homebrew Blastoff!

I look forward to seeing you all at the Holiday Party – don’t forget to show up in time to vote, and bring a bottle for the bottle exchange if you feel so inclined.

Cheers!
Sean

Secretary’s Report

The month of November means two things: Changing leaves and Mead. The tradition seems to be that November’s Meeting is actually a MEADing. Last month’s meeting was no different. If you missed it, the meeting was at Webb’s Honey on 520. Dave Webb was extremely gracious in allowing our club to visit the honey house and see the honey extraction equipment in operation. The Meading was even topped off with Mead tastings and a quiz on Mead. The event was topped off with a Bon Fire. A big Thank-you to Dave Webb for allowing the club to enjoy the location by hosting the Meading at his business.

Education – Yeast Washing: Reusing your Yeast

Washing yeast to reuse it in another batch of beer is a great technique to have in your home brewing arsenal. Yeast washing is a simple process used to separate the live yeast from the underlying trub (hops and spent grains) left at the bottom of your fermenter when making beer. Read more here.

Blow off from the Prez

Well, we did it. We got through 549 beers, meads, and ciders and we’re ready to celebrate! I think just about everyone who was there will tell you this year’s Commander SAAZ Interplanetary Homebrew Blastoff was a smash hit! We had some small obstacles to overcome, but nothing that we couldn’t handle. We now enter a period of two months known as recovery and preparation. Recovery means that our next two meetings are a little more laid back than the earlier ones, but by no means and less fun. Our next meeting is the MEADing. For those of you who are new to the club, this is a meeting held at Dave Webb’s Honey House on the outskirts of town. The club will bring all of the bottles of unopened mead and cider from the competition and will also provide the food. We ask that, as usual, you bring a side dish, ice, and a chair.

We will wrap up the year on Saturday December 10th with the Holiday Party at the Vita’s in Titusville. I like to think of this as Christmas Dinner with the cool family! We’ll have the beer engine on the back porch so bring your kegs. Jill and Larry will be making turkey and ham, so bring your favorite side dish or dessert. We will also do our annual bottle swap. All you need to do is bring a nice bottle of beer (covered to no one can see what it is). Usually people bring a 22oz or 750mL that’s around the $10 range. This is completely voluntary, so you don’t have to if you don’t want to. We will also vote on our new officers at the Holiday Party, which brings me to…

I recently sent out an email asking for people to consider running for office. It was later pointed out to me that I didn’t mention all of the offices. My mistake. All of the offices are up to a vote, even if the current officer is running again. I had only mentioned the offices that were definitely going to be vacant as people would not be running for them next year. I really implore you to consider giving back to the club and participating in office. It is a great chance to see the behind the scenes operations. Just ask anyone who has been an officer before – it’s a great time. So far we have nominations as:

President – Kip Cadoret, Dave Webb

1st VP – Matt Backus (incumbent), Alex Hansen

2nd VP – Open for nominations

Librarian – Jason Stroble, Sonia Miller

Secretary – Alex Hansen (incumbent)

Newsletter Editor & Webmaster – Dan Shira

Treasurer – Anne Gregg (incumbent)

See you all November 12 at Webb’s.

Cheers!

Sean

Secretary’s Report

The month of October was an incredible month for SAAZ. There were a lot of events that happened and I wanted to touch on a couple of the major points. The Commander Saaz Competition was a great success this year. Planning is already taking place for the 2012 competition so be sure to keep an eye out for a survey on the Saaz website to let the officers know what you liked or would like to improve on about this year’s competition. The competition saw a record number of entries and attendees. Throughout the competition weekend there were extreme adventures of judging, trying new beers, and awards. The weekend started off with one of the best blastoff parties in history. The fact that Friday night’s event sold out so quickly can be a testament to how much fun everyone has at the event each year. Saturday’s award ceremony featured some great beers and a full house of attendees. My congratulations go out to all of the winners and individuals that helped to make this year’s competition a true success! I am certain that next year will be even better!

Thanks again everyone!

-Alex

Jack Bragg

Jack Bragg, 68, of West Melbourne, passed away on Tuesday October 25, 2011 in Melbourne. He was retired from Rich Sea Pack in Brunswick, GA moving to Melbourne in 1992 from Brunswick, GA. He was a veteran of the US Navy, member of The West Melbourne Moose Lodge, American Legion, and Am. Vets. He enjoyed fishing, playing golf, hunting and riding his motorcycles.

Survivors include his sons Jackson, Jr. and Michael, a brother Bill Bragg and a sister Barbara Rehnborg.

Jack was an active SAAZ member for almost 10 years. You couldn’t go to a SAAZ party or meeting without seeing Jack there to help. He will be missed by all of us. In his memory, SAAZ is making a one-time donation to the Wounded Warrior Project. We encourage all SAAZ members to consider doing the same.

November’s meeting, on November 12th, is the MEADing! Once again, it will be at SAAZ member Dave Webb’s honey house. The address is 21777 SR 520, in Orlando. It’s not really in Orlando, that’s just the post office that delivers out in that neck of the woods.

Setup will be around 3pm, with festivities at 4pm. The honey house will still be open for business at that time, so please be considerate of customers when parking and leave room in front of the store. Dave is arranging for an educational demonstration of the honey extractor. There is also an observation hive where you can see the bees at work. I think this will be a real treat for everyone. If you’ve never been there, don’t miss this chance to check it out!

The club will provide food on the grill, but please bring a side dish. At this time, we are not planning on bringing the beer engine, but we will have the leftover meads from Commander SAAZ. However, it’s always good to bring an extra bottle or two to share.

So what will you need to bring?

• Side dishes (salads, desserts, etc.)

• Lawn chairs for lounging

• Water, important since mead w/o Food = BAD, mead w/o Hydration = WICKED HANGOVER

• Mead

Directions:

The honey house is about halfway between SR 50 and SR 528 on SR 520 on the east side of the road. It looks like there are at least 4 different ways to get there depending on where you come from, so I would suggest typing it into google maps or your Garmin.

Please bring:

• Side dishes (salads, desserts, etc.)

• Lawn chairs for lounging

• Kegs for the beer engine

• More beer

Directions:

Directions will be emailed to the membership and interested peoples
