Beer School @ The Broken Barrel Tavern

It may be graduation time for many out there, but class is in session at The Broken Barrel Tavern. We’ll have the next installment of Beer School on Saturday, May 18th.

Beer School 101 – Intro to Beer. This overview class will provide the basics of beer, styles and the brewing process. There will even be samples of each of the topics. Class begins at 12:00 noon, don’t be late or you’ll have a detention. Cost – FREE! *All participants must be 21 or older*

Beer School 202 – Sour Ales. This class will dive into the tart and tangy styles of sour beers. We’ll discuss, learn and sample (that’s right, there’s a practical component to this class too!). Class begins at 3:00pm. Cost – $10.00/person. *All participants must be 21 or older*

Bottoms Up Beer Run

SAAZ has a new fundraiser and needs your help. We want to raise money to support club brewing, education and fun trips/pub crawls.

We are hosting a 4K beer run with homebrew at the start, end and each 1K along the way. We need lots of help to make this successful.

Everyone mark your calendar to help volunteer or run the Bottoms Up Beer Run 8/17/13 at 6:30pm.

I need brewers to help brew the beer for the run, SAAZ will reimburse you.

Attention Members

We realize that the beer you provide for events such as those above does not magically appear and cost you nothing. Therefore, SAAZ will be implementing a new policy to help reimburse you for the beer you bring to events.

Full keg – $40

All reimbursement requests can be given to the Treasurer.

AHA Club Only

Think your homebrew club makes some pretty good beer? Have you ever wondered how it stacks up against other clubs’ beer?

The American Homebrewer’s Association Club-Only Competition (COC) program offers AHA-Registered Homebrew Clubs an opportunity to compete with other AHA-registered homebrew clubs. Each competition concentrates attention on a specific style of beer or mead, giving our club the opportunity to educate club members in these styles by focusing on them at club meetings or tasting events.

All AHA-registered homebrew clubs are eligible to compete in the COC. Each club may only send one entry per competition.  So, bring your homebrew to the April meeting for the next COC!!

May 2013

Extract Beers

Hosted by Stan Backlund and the Hangtown Association of Zymugry Enthusiasts club of Placerville, CA, this competition covers BJCP categories 1-23 where 50% or more of the fermentable sugars must come from the use of malt extract.

So, bring your eligible homebrew to the April meeting and some of our resident expert judges will determine which beer should represent our club!!  If your beer is chosen, SAAZ will reimburse you for shipping!!

A Walk on the Wild Side

Special Hoperations invites you to come take a walk on the wild side.

Special Hoperations, a homebrew club in Tampa Florida, would like to pass along the follow information regarding our upcoming Sour and Brett Beer (mead and cider, too) competition. In order to make it easy for all to enter, we are asking for only two bottles and most bottles are accepted regardless of size or manner in which the bottle was capped. It means extra work for us, but we don’t mind. We know these are time consuming beers to make and therefore we accept the extra effort and care it will take to logistically handle different bottle sizes and caps during cellaring and judging to ensure your beers are stored and served properly.

Registration opens May 3rd and closes on June 1st.

It’s been a very busy spring for SAAZ with the beer festival, bus trip, spring party, seems that organization I belong to has something going on in the spring when I am very busy at work also. Hope everyone enjoyed the spring party this year as we tried something a bit different with live music. I think the bus trip went well. Everyone seemed to enjoy it so I am ready to do it again. We need to fill the bus to make it cost effective. I think Jacksonville may be a possible destination with good microbreweries to stop by. Hope to see everyone at the April meeting at WOB.

2013 Commemorative Beer

For this year’s commemorative beer we will be brewing two (2) 10 gallon batches of an Imperial Stout.

One batch will be brewed at Sean & Anne’s house and the other will be brewed at Kevin and Sonia’s house.

The exact dates of the brewing are still to be determined, but once announced SAAZ members are welcome to stop by either location to lend a hand or watch.

Q: Did you hear about the fire in North Carolina State’s football dorm that destroyed 20 books?

A: The real tragedy was that 15 hadn’t been colored yet.

Wine is not the only drink that can be aged for maturation. Many beers benefit from extended aging. We’re not talking about your average beer with a mere shelf life of 3-6 months, tops — before quality begins to degrade. We’re talking about beers that beg for maturation and strict storage like vintage beers, barleywines, imperial stouts, Belgian strong ales, lambics, old ales and so on. Ideally, any type of beer that can be laid-down for a year or two, or even more, in order to build a slew of complexities and thus further its character in a positive way.

If you’re interested in starting your own beer cellar it’s actually pretty easy. First, you’ll need to maintain enough patience and will-power to not drink them too early. This, beyond anything else, is the public enemy number one to your attempts. There’s nothing worse than thinking about that special beer, just sitting there, as it whispers its sweet song to the pleasure portion of the brain, “Drink me”.

The Palm Beach Draughtsmen’s 18th annual Hurricane Blowoff

Always an AHA/BJCP certified homebrew, mead and cider competition, will come ashore in suburban West Palm Beach @  El Encanto during the weekend of April 19th – 20th.

We encourage SAAZ participation in entering as well as judging!!

The entry window will open on March 11th and close at 5pm on March 29th.

Pre-Judging will be on the 5th-7th, with some additional pre-judging on the 12th-13th, if needed.

Judging will commence on Friday the 19th @ 2pm – ?? and judging on Saturday will run from 9am – ?? followed by the Best of Show.

The awards dinner (great food and homebrew!), party and excellent raffle will follow the BOS, starting @ 7pm at El  Encanto .

Making a Porter Recipe

The Porter Beer Style

Porter is a English beer style that has become very popular in the United States. This week we will look at the origins of Porter, how to brew Porter at home and provide a collection of sample recipes. When I started brewing back in the 1980′s, the microbrewery revolution was still in its infancy, and it was difficult to find anything beyond the classic American lager in the stores. Yet dark beers were a passion of mine, and Porter was a perennial favorites.

History

Porter is first mentioned in writings in the early 1700′s, and the name Porter is derived from its popularity with London’s river and street porters. There are many stories surrounding the origins of Porter, such as one about it being a blend of three other beers, but more likely Porter was derived from strong brown ales of the period. Original porters were substantially stronger than modern versions. Wikipedia mentions that hydrometer measurements on 18th century Porters indicate original gravities near 1.071, or 6.6% ABV – about twice the alcohol of a modern beer.
Taxes during the Napoleonic wars drove the alcohol content down to modern levels. Porter was also the first large scale beer to be entirely aged before delivery, often remaining in vats or casks for 18 months before shipment to pubs. As the 1800′s started, breweries mixed aged porter with new porter to reduce storage times. Stouts started as a stronger, darker version of Porter, with most including the name “Stout Porter”. Eventually the “Porter” tag was dropped giving the modern style of “Stouts”. (Re: Wikipedia)
In another interesting side note, Porter’s popularity was so high that it was stored in huge vats in the late 1700′s, and there was an arms race of sorts between major breweries to see who could build the largest vas. According to Ray Daniels book (below), the largest vats approached 20,000 barrels (860,000 gallons) at the end of the 1700s. This compares to the largest in the world today which clocks in at around 1600 barrels, less than 1/10th the size. In October of 1814, a huge vat at the Meux brewery ruptured and reportedly wiped out an adjacent tank and devastated the neighborhood in a 5 block radius. In the ensuing chaos at least 8 people were killed.

Designing a Porter Recipe

Designing Porter recipes can be a lot of fun as the Porter style includes room for experimentation. Porters have an OG of 1.040 and up, color of 20-40 SRM and bitterness of 18-35 IBUs for Brown Porter, or up to 55 IBUs for higher gravity Robust Porter. The color is brown to black, and they have low to medium hop flavor. They are almost always brewed with a full bodied mash schedule (higher mash temperature of 154-156F) to give a full body taste. They have low ester, fruitiness and diacytl, are well balanced and have low to medium carbonation.
Traditional porters start with a Pale malt base, and typically add a mix of Crystal, Brown, Chocolate and Black malts to achieve a dark color and taste. Roasted malts are used only in Robust Porter styles. Pale malt makes up 40-70% of the grain bill (60-80% for malt extract brewers). Dark Crystal/Caramel malts are used for color and body and provide at least 10% of the grain bill. Chocolate and Roasted malts each average around 5% of the grain bill, with roasted malt less common in Brown Porter.

A variety of grains including Munich malt, Roasted malt, wheat and additives are also used. I will occasionally brew “kitchen sink” Porter which consists of whatever malts I have laying around over a pale malt base. Traditional Porter also made heavy use of Amber and Brown malts, though these are less commonly used today. Ray Daniels recommends a mash temperature of 153F, though I often go a bit higher (156F) to provide a full bodied beer.

Traditional English hops are the appropriate choice for Porter, with East Kent Goldings being a favorite of mine. Other good choices include Fuggles, Northern Brewer, Northdown and Williamette. Light dry hopping is appropriate to the style, though hops aroma should not be dominant. English ale yeast is traditionally used for Porter for its fruity flavors, though other high attenuation yeasts are appropriate. Irish ale yeast is also occasionally used by homebrewers. Adjuncts are only rarely added to specialty Porters. A London water profile (high in carbonates) is best.

SAAZ ROAD TRIP!!

On Saturday, March 9th, 2013 SAAZ will be taking a road trip to Cigar City Brewing in Tampa for the Annual Hunahpu Day. The club will be securing a bus that will take us to Tampa and back.

The 2013 Coconut Cup is almost upon us.

We expect to reach our entry cap of 300 any day now, so our little club will need all the help it can get judging entries from all over the State and the US.

We have four judging sessions scheduled –

4) Saturday, 3/2.

Fermentation Temperature Control Tip – By: Jonathan Plise

Temperature control during fermentation is the most important process in making beer. In my 9 years running our Concord, California showroom many customers have asked “What can I do to keep fermentation temperatures cool without having to buy a refrigerator or your temperature controlled conical?”.  One method, commonly discussed on the internet, is placing your carboy in a shallow pan filled with water and covering that with a t-shirt. The evaporation of water up through the t-shirt can cool you fermenter up to 5 degrees off the ambient temperature. However in the middle of summer this is just not enough. One of my favorite methods is placing my carboy or bucket into an ice water bath.

Blow off from the Prez

Well, we survived the winter solstice without the end of the world, so SAAZ will continue into 2013 and it looks like I, David Webb, am your new president.

Andrew Carpenter is the 1st vice president
Shelly Hudson is 2nd vice president
Ann Gregg will continue as treasurer
Kevin Miller is secretary
Sonia Miller will continue as librarian
Dan Shirah will continue as web master

I believe this group has the potential to make 2013 a good year for SAAZ. We already have a few things planed along with the normal meetings, parties, and beer festivals this year, such as doing some road trips (First possible road trip: Hunahpu Day at Cigar City!). I do want to encourage members to help out when they can; the officers can’t do it all. If you have some ideas on educational topics for meetings let me know. I also would like to encourage members to homebrew and enter competitions and attend other Florida competitions. If you have entries, the club will help you ship or deliver them. Growing Your Own Hops (from morebeer.com)

Growing your own hops at home is easy, fun, and very rewarding – especially if you brew your own beer at home. Hop Vines grow from a rhizome, which is essentially a piece of root taken from a larger, mature plant. The rhizome is planted in the ground in the late spring and small, green shoots pop out of the ground a few weeks later. A hop vine can be very vigorous, growing up to 2′ per week till the end of June when growth slows down and the plant enters into flowering stage.

When and How to Order Hop Rhizomes

Hop Rhizomes are available once per year, typically in March/April, after the farms dig up the rhizomes and ship them to suppliers. Pre-sales start in February and allows you to order the hop rhizomes in advance to make sure you can get the varieties you want. When you receive your hop rhizomes in the mail, keep them refrigerated (but not below freezing) and well ventilated until your soil is ready for planting.
